The Story Behind Evia Honey
It started with a question.
Why does honey from Greece taste so different?
I asked this after tasting a jar a Greek family friend brought back from the Peloponnese region of Greece. It was nothing like what I'd bought from stores - darker, more complex, almost herbal. It made every other honey feel hollow.
I became obsessed with finding out why.
The Peloponnese Region
The Peloponnese is a peninsula in southern Greece, one of the most celebrated honey-producing regions in the world. Its interior is covered in wild thyme - not cultivated, not farmed - just growing freely across hillsides that have been relatively untouched for centuries.
The bees that work these fields produce honey with a flavor profile that can't be replicated elsewhere. This is what terroir means - the taste of a specific place.
What We Promise
Every jar of Evia Honey is:
- ✦ Sourced exclusively from small-batch apiaries in the Peloponnese region of Greece
- ✦ Raw and unfiltered - never heated above 40°C
- ✦ Free from additives, blending, or processing
- ✦ Harvested seasonally, not year-round
We will never scale in a way that compromises this. If that means we stay small, we stay small.
